When It’s Time To Cure Eggs,

T

A lot of folks are intimidated at the
prospect of curing eggs, but it’s actually
a pretty simple process here are the basics
steps…
Get Off On The Right Foot
Blood is the enemy of quality roe. “Roe
Fish” should be bled immediately. At the
cleaning station extract the eggs with care.
Back at home butterfly the skeins open and
use a paper towel to gently blot away any
lingering blood.
Start Curing
Sprinkle 1 1/2 to 2 tbsp. cure onto egg
skeins (per pound of roe), Getting cure
between flaps of skein (sprinkle with skin side down/eggs up).
Whole skeins can be folded open and cured whole, or cut up into
clusters.
2. Place eggs in container, allow to develop juice. Let skeins stand
in juice for 30 minutes to 1 hour Roll eggs around several times to
make sure juice totally penetrates eggs.
3. Remove skeins, shake off excess juice and drain in a strainer 1 to
2 hours.
4. Set skeins out on screening (always cover with an old towel)
and allow to air dry for 12 hours or longer. (Times vary significantly
due to temperature, humidity.) 5. When eggs are of desired firmness
or texture, package in glass, plastic containers or zip bag. Store in
fridge for weeks, in freezer up to 1 year.
