COOKIN ' YER CATCH by Paulette
He’ s a carpenter, so, it is something he could appreciate – the old fashioned handmade nails that they use to use back in the olden days. I’ m still wanting to go fishing; but, when the weather turned cold again, I chickened out or I had other obligations that kept me away. I’ m still hoping to go soon. I notice the weather today isn’ t as cold as it has been. Yay!
This time around, I thought it would be fun to revisit a couple of old recipes that I have enjoyed using for bass and crappie. Go for it!
Italian Style Black Bass
INGREDIENTS
• 4 black bass fillets
• ¼ Cup Italian dressing of your choice
• 3 C grated Zucchini squash
• 1 C Mozzarella cheese, shredded
• ¼ tsp. Each garlic salt & oregano
• 1 can S & W diced tomatoes with carmelized onions
• Parmesan cheese
• olive oil spray
DIRECTIONS
Preheat oven to 400 degrees. Place shredded zucchini in a clean cotton flour sack style towel. Wrap towel around the zucchini shreds and squeeze out the excess water( this method is also good for preparing potatoes used for hash browns). Then, place the zucchini in a bowl with the mozzarella, crushed oregano, and garlic salt. Drain all but 1 Tbsp. Of the juice from the tomatoes. Reserve the 1 Tbsp. To combine with salad dressing. Also, set aside 2 Tbsp. of the tomatoes. Then, combine the remaining drained tomatoes with the zucchini mixture.
Dip the fillets into the salad dressing to coat all sides. Take a casserole dish and spray the inside with the olive oil spray. Spread the zucchini mixture on the bottom of the casserole. Arrange the fillets over that. Sprinkle overall generously with the Parmesan cheese. Sprinkle the remaining 2 Tbsp of tomatoes over the fillets. Bake covered for 15-20 minutes. Remove cover. If it isn’ t lightly browned and isn’ t cooked through yet, leave uncovered and put back into the oven for another 5 minutes or so. Serves 4.
Crappies Ole’
INGREDIENTS
• ¾ lb crappie fillets
• 1 avocado, peeled, seeded, and sliced
• ¾ C medium heat Salsa
• 1 green onion
• 4 slices Monterey Jack cheese
• olive oil spray( opt)
• 2 aluminum foil squares or 2 single covered casseroles
DIRECTIONS
Spray the area where the fish will be placed with olive oil spray( center of foil or bottom of casserole). Spread about ¼ C salsa on top of that. Lay fillets on top of the Salsa beds. Arrange avocado slices on top of the fillets and follow with a sprinkling of green onions. Lay cheese over this and drizzle with remaining Salsa. Close packet or cover casseroles and place in a 400 degree oven for 20 minutes. Serves 2 happy campers.
